Prepare the steak:

· Cut the tenderloin into medallions about 3 inches thick.

· Season with salt and pepper.

 

Cook the meat:

· Sear in a hot pan for 2–3 minutes on each side until a nice crust forms.

· Add butter and rosemary, and baste the meat with the melted mixture.

 

Serve:

· Serve the filet mignon over mashed potatoes and pour the hot mushroom sauce on top.

· A rich and elegant dish full of flavor.
