Chuck Tender
It consists of the supraspinatus muscle located dorsal to the medial ridge of the scapula bone, and is found in the shoulder region of the animal, specifically in the chuck or shoulder blade area. A 3-ounce portion of chuck tender provides approximately 25 grams of protein.
